Vacuum Cutter

Function:

To cut, mix and emulsify fish, beef, pork, chicken, duck and other meat. With the extracting of the oxygen, the bacteria content can be reduced during cutting, and fat oxidation can be slowed down, and shelf life can be extended. On the other hand, without enough oxygen, chopping can be finer and more homogeneous, free from foam, and protein yield increased, also enhance the banding of the flavor and stability of the emulsion.

Features:

Right angle sealing tape ensures the effect of the vacuum. And 6mm wall thickness of the cover can avoid its deformation while vacuuming.

Equipped Zoncn frequency inverter and Siemens motor, knives’ rotation speed can be adjusted among 200rpm-3500rpm. This vacuum bowl cutter has lower noise, higher efficiency than normal bowl cutter.

The space between the knives and the bowl is 1.5~2mm, to ensure the cutting effect.

The brand of knife bearing is FAG, and the vacuum switch is SANWA, etc., the key parts usually use famous brands to ensure the steady operation.

All the parts which direct contact with food are made of SUS 304, including the cast bowl. Only the base is made of carbon steel and covered by SUS304.
